Healthy baked sweet potato fries dipped into an addicting curry cilantro mayo! So delicious and gluten-free with a vegan option.
1. Preheat the oven 375ºF.
2. Peel the sweet potato, and cut into french fries.
3. Lay sweet potato fries on a large baking sheet and add olive oil and all spices.
4. Toss to coat and place into the preheated oven for 20 — 25 minutes, or until fries are cooked on the inside and starting to brown on the outside. Flip halfway through.
5. In a medium-sized bowl, add all of the mayo ingredients and mix until combined.
6. Once fries are cooled, dip in mayo and enjoy!
