Baked sweet potato fries are the perfect healthy upgrade to traditional french fries. Not only do sweet potatoes have an excellent nutritional profile, but they are also part of a class of “sweet vegetables” that are helpful in curbing sweet cravings.
Preheat oven to 425 F. Peel sweet potatoes. Using a sharp knife, carefully cut the potato in half lengthwise. Continue to cut in half lengthwise until you have fries. Depending upon the size of your potato, your fries may be too long. If so, cut them in half.
Place the cut sweet potatoes in a bowl with olive oil and coat the potatoes. Lay them on a parchment-lined baking sheet. Season with salt, garlic powder and cayenne pepper. Bake for 15-20 minutes, flip and bake another 15-20 minutes, or until crispy.
Kid-friendly option: For kids who prefer less spice, remove the garlic powder and cayenne for mild-flavored sweet potato fries.
