Don’t be afraid! This is a old-time easy recipe just perfect for an autumn day! The bacon, tomatoes and sauerkraut all melt together into a wonderful savory side dish.
Preheat oven to 325 degrees. Spray a shallow 9 x 13 baking dish with nonstick cooking spray.
In a large bowl, combine all ingredients thoroughly. I find it easiest to just mix everything together with clean hands. Make sure bacon is fairly evenly distributed throughout the mixture.
Spread evenly in a prepared baking dish.
Bake, uncovered, for about 2 hours, until the top of dish is a dark golden brown and most of the liquid has cooked away.
NOTE: You must us a shallow baking dish or this will not cook correctly.
