Shredded zucchini with Parmesan cheese.
Using a grater, shred the zucchini and onion into either large or medium shreds. Squeeze excess water from zucchini and discard liquid.
In mixing bowl combine zucchini and onions, Bisquick, Parmesan cheese, eggs, and bacon/ham. Mix well.
Place into casserole dish and cover the top with Parmesan cheese. Bake uncovered at 350°F for 20-25 minutes or until Parmesan cheese is golden brown.

Very glad you liked it. My mom used to grow zucchini in the garden and made this all the time. It was always gone in about 10 minutes.

Very yummy! I forgot to squeeze out excess water, but it turned out ok. Very delicious. I will make this again. My hubby loved it. I will shred up some zucchini and freeze so we can have this throughout the winter.
