I love potatoes. In all forms. This is a super easy dish to make if you want to get rid of some ingredients in your fridge! Fair warning: you’ll end up with a lot of leftovers of this decadent side dish!
1. Boil the potatoes until fork tender.
2. Drain them and then put them back into your boiling pot (no need to dirty a new bowl!).
3. Add the cream cheese and sour cream and then mash the potatoes. You can use a fork or potato masher. You can also use a hand mixer to get a creamer texture.
4. Next add the chives and most of the cheese and mix the potatoes.
5. Add salt and pepper to taste.
6. Pour the entire mixture into a 9 x 13 glass baking dish that’s been lightly greased (you can just spray it with some cooking spray).
7. Distribute the margarine on top of the potatoes, and sprinkle a little leftover cheese on top.
8. Bake at 350ºF for 30 minutes or until the cheese is melted and the potatoes start to turn golden brown.
You could also add in bacon, different types of cheese other than just cheddar, paprika, hot sauce … whatever you like!
The most important thing is to enjoy it!
