Skillet cooked potatoes with peppers, onions and bacon seasoned with thyme and ground pepper. Perfect for breakfast or as a dinner side dish.
In a skillet over medium low heat, cook bacon until crispy, stirring occasionally, about 10 minutes. With a slotted spoon, remove bacon and drain the fat from the pan, leaving 1 tablespoon of bacon fat.
In the same skillet the bacon was cooked in, add the potatoes. Cover the skillet and cook for 10 minutes, stirring occasionally. Add the peppers, onions, thyme and ground pepper and mix well. Cover and cook, stirring occasionally, for 10 more minutes or until the potatoes are fork tender. Stir in bacon and serve warm.
