Description

My children have called our next door neighbor Babci since the day we moved in 16 years ago. This is how she taught me to make sauerkraut to go with kielbasa. Looks like it makes a lot, but it cooks way down and is delicious.

Ingredients

  • 4 bags 2 Lb Bags Of Sauerkraut
  • 1 pound Bacon
  • 3  Large Onions , Chopped Fine
  • 1 cup Water
  • Pepper To Taste

Preparation

1. Rinse and drain sauerkraut. Set aside.

2. In a large frying pan over medium heat, cook bacon until crisp. Then remove the bacon from the pan (leave the grease in the pan) and set bacon on a paper towel lined plate. Once it’s cool enough to handle, crumble and set aside.

3. Add onion into the frying pan with all of the bacon grease and saute until soft.

4. Add sauerkraut into the pan with the onion. Cook and mix until color changes to light brown.

5. Add water, reserved bacon and pepper to sauerkraut mixture. Cover, simmer on very low heat for 45-60 minutes. You may add more water if necessary.

6. Then remove a cup or so of sauerkraut and fry it in another pan over medium heat until somewhat browned. Add this back into the pan with the rest of the sauerkraut and mix well. This will add some more color, texture and flavor to the sauerkraut. Enjoy!
