Fresh ripe tomatoes, creamy diced avocado, crisp red onion, tangy lime juice and fresh chopped cilantro. The perfect topping for enchiladas and tacos.
Place red onion in a strainer or sieve and rinse under cool water to remove the harsh flavor. Drain well. Place in a bowl and add tomatoes, jalapeno, lime juice, cilantro, salt and pepper. Let it chill for 30-60 minutes to let the flavors meld.
When ready to serve, pull it out of the fridge. Core, peel and dice the avocado. Gently mix it into the bowl of pico de gallo and serve with tacos or your favorite Mexican entree. Enjoy!
