My husband’s family in El Paso passed this down many years ago and I always get asked to share the recipe when I make it. It’s an enticing and colorful veggie dish for the holidays or potlucks. Even though I prefer to prepare vegetables closer to Mother Nature’s pure perfection with just a little enhancement, I can never resist this dish!
Saute onion and celery in butter until onion is transparent. Combine onion and celery with the rest of the ingredients except for the Ritz crackers and butter. Mix well and pour into a large, lightly greased casserole dish. Crush the Ritz crackers and mix well with 1/4 cup of melted butter. Top the veggie mixture with the Ritz Cracker mixture. Bake at 350 degrees for 45 minutes.
