Gingery kale salad with avocado, carrots and sesame seeds. Makes a great side dish to salmon or tuna!
Wash and dry kale thoroughly. Cut kale away from stems and into bite size pieces. Peel carrots and then use a peeler to create ribbons. Heat oils over medium heat in large pot and add ginger and garlic. Add carrots and saute a minute or two to soften carrots. Add kale and season with salt and pepper. Saute until tender, about 6-8 minutes. Remove from stove and top with avocado and sesame seeds.
