Love oven-baked potatoes but wish they didn’t take so long to make? Make these quick and super easy potatoes in just 25 minutes!
Clean potatoes and pierce holes throughout the whole potato with a fork.
Pour 1 cup of water into a pressure cooker. Place the potatoes on top of a steamer rack. Pressure cook at high pressure for 12 minutes. Adjust the time from 10 minutes for small potatoes to 20 minutes for extra large potatoes, depending on the size of your potatoes. Then, quick release.
Coat potatoes with olive oil and season with kosher salt and ground black pepper. Bake potatoes at 400ºF for 10–15 minutes to crisp the skin.
