This is the one with cocoa. Cocoa adds richness and more depth of flavor. It won’t make your tacos taste like chocolate, I promise. This seasoning is low in sodium, easily made gluten-free, and free of MSG and other additives.
Note: The above measurements are about equal to 1 taco seasoning packet. To make a big batch—about one cup or 4-5 packets worth of seasoning—quadruple the recipe.
Combine all ingredients well and store in an airtight container.
When you are ready to prepare your dish: Add about 3-4 tablespoons seasoning plus about 1/3-1/2 cup of water to season about 1 pound of ground meat for tacos. (You can adjust these ratios depending on how strong and saucy you like it.)
Notes:
1. If you don’t have coriander, it won’t be the end of the world.
2. You can leave the flour/cornstarch out, but it helps to make saucier taco meat, if that’s what you want. If you leave it out, use less of the seasoning in your dishes because the mix is more potent that way.

how wonderful! My sister in law is allergic to gluten, and hasn’t had “real” tacos in years! I can’t wait till she’s back in town and we can have a Mexican night!
