Lemon zest and fresh ginger infused raw honey. Perfect for sweetening hot or iced tea, smoothies, and other treats!
Bring water to a simmer in a double boiler if you have one, or in a medium saucepan with a heat-proof glass bowl on top. Make sure the water is not touching the bowl. Add the honey to the bowl of the double boiler and mix in the grated ginger and lemon zest. Stir to combine, and continue to stir regularly for 10 minutes, being careful not to allow the honey to boil.
After 10 minutes, remove the honey from the heat and allow to cool to room temperature. Pour the cooled honey through a mesh strainer into a glass container or jar with an airtight lid. Seal and store at room temperature.
