I’ve been making vanilla for years. I keep the beans in the jar unless I have a use for them. Ina Garten said she’s had her jar going for 20+ years. Just keep replenishing as needed; beans and alcohol. I also use vodka or a good quality bourbon. I was given a gift of vanilla among other baking goodies from a high end store and it was made with bourbon, not vodka. Either is good, just keep it in a dark place. Keep in mind the type of jar you use because you pour it onto a spoon; so you may want to use an empty bottle vs. canning jars. You may find a good source of beans at a food show if one is in your area.

I made up a dozen 1/2 pint jars of this as part of my Christmas gifts for family/friends last year- they’re still using it and loving it. Thanks so much for sharing!

I am looking forward to trying this. Until recently I hadn’t been able to find vanilla beans in our area and snagged some excitedly when Costco brought them in awhile back. Thanks!

96 teaspoons…I’m a nerd like that lol.
I’ll definately have to give this a try. I’ve heard nothing but good things about homemade vanilla. I might make some to put in my Christmas gifts this year.

Oh, and I forgot to say, I have the rest frozen for when I need them, and they freeze well and still taste great.

I’ve gotten my vanilla beans at http://saffron.com/. They were so inexpensive I was a bit skeptical until I got my package of them – 1 lb. of Vanilla planifolia beans for $19.95. They are moist, fresh and plump and I have loved using them in ice creams, pastry creme and have a bottle of homemade vanilla in the cupboard. Yum!

I’ve done this with a few beans and some rum, also very yummy! And the fragrance is to DIE for.
