Candied ginger is so expensive! Make your own. It’s easy and thrifty.
Heat sugar, water and lemon juice until it just comes to a boil. Add minced ginger and cook for 20 minutes or until ginger is tender. Drain. Toss with additional sugar until all the pieces are well coated. Store at room temperature, covered, for up to 3 months.

DON’T DRAIN THE JUICE!!! It is so super yummy and can be used for many, many things. Just reserve it in a jar before you toss the strained pieces in sugar. I use a little in pies, cakes, cookies, and cocktails, wherever I want an extra ginger/spice kick.

Thank you for this! I am in the first trimester of my second pregnancy and sick as a dog! I have been cleaning out our natural grocer and the stuff is pricey, I can’t wait to try this!
