You can make this syrup using any flavor fruit juice you like. Use this as a drink flavoring, tart glaze, pancake syrup, cake drizzle, ice cream topping or whatever your heart desires.
Whisk egg white in a large bowl until slightly frothy, then whisk in water and sugar. Pour mixture into a sauce pan and bring to a boil over medium-high heat, cook stirring constantly for approximately 10 minutes. Whisk in the fruit juice of your choice and allow to come to a boil, let boil for 2 minutes, remove from heat and allow to cool completely.
Store in an airtight container in the fridge for up to 3 months.
To make this syrup more like freezer jam substitute your favorite fruit puree for the fruit juice.
