Beet chips are a healthy alternative to a favorite snack.
Preheat oven to 350ºF. Prepare two medium baking sheets and set aside.
Using a mandoline with the slicer blade set at 1/16 inch, slice beets. Place sliced beets in a bowl and toss with olive oil and salt.
Split the beets between the baking sheets and spread in an even layer. Bake for 20 minutes, remove the trays from the oven and flip the beets. Return the trays to the oven and bake for another 20 minutes, or until the beets begin to crisp.
Once crisp, transfer the chips to a wire wrap to cool and crisp. Serve immediately or store in an airtight container
