Baked oatmeal is a quick prep meal that’s great for breakfast or a snack. Plus, it can easily be made seasonal.
Preheat oven to 350ºF. Prepare an 8-inch round pie dish and set aside.
In a large bowl, whisk rolled oats, baking power and cinnamon. Set aside.
In a separate medium bowl, combine milk, egg, oil, and vanilla extract. Add wet ingredients to the dry ingredients and stir to combine. Finally, add strawberries and chocolate and stir to combine.
Pour the oat mixture into the prepared pie dish and bake for 30 minutes, or until oatmeal has just set. Once baked, remove from the oven and serve immediately or store in the fridge for up to a week.
