This recipe started out as a combination of my Grandma’s chili sauce recipe and one that I had made in the past. I didn’t have enough of the correct ingredients to make either one so I decided to combine the two and follow the general idea. I ended up with a great salsa.
Place the diced tomato, celery and onion in a large bowl and sprinkle with salt. Let sit overnight in the fridge.
Rinse and drain in the morning. Place in a large pot on the stove and add the remaining ingredients and bring to a boil. Use an immersion blender to blend to get a nice smooth sauce. Taste and re-season if needed.
Can and enjoy. Makes about 8 pints.
