Dad wanted wanted some salt cucumbers. After a quick call to Grandma, we figured out what he was talking about.
Clean and sterilize canning jars, lids and rings.
Put cucumbers in a bowl and cover with lots of salt (I recently used 2 medium cucumbers and 1 cup of salt). Let sit for a bit until all the water comes out of the cucumbers (about 1/2 hour or so). Rinse off thoroughly in cold water.
Put cucumbers in jar. Pour enough white vinegar in to cover cucumbers.
Chill completely and eat. Store in refrigerator.

We love these, but I use the small baby cucumbers sliced and sweet onion slices too! We can hardly keep them made in the summer, we go through them so fast!

This is what the Danes call “Cucumber salad.” It’s great as a side in the summer or with broiled meats. I usually add a little sugar, just a teaspoon or so, with the vinegar before storing. This cuts the acid and prevents the cucumbers from tasting bitter.
