Description

If you like relish, try this on your next hot dog! So easy!

Ingredients

  • 2 whole Green Bell Pepper, Grated
  • 2 whole Red Bell Pepper, Grated
  • 10 cups Grated Zucchini
  • 4 cups Grated Onion
  • 4 Tablespoons Salt
  • 4 cups Sugar
  • 2-½ cups White Vinegar
  • 1 Tablespoon Dried Mustard
  • 1 Tablespoon Turmeric
  • 1 Tablespoon Celery Seed

Preparation

Sprinkle grated peppers, onion and zucchini with salt and let set overnight in the fridge.

Drain, rinse and combine remaining ingredients in a heavy-bottomed pan. Bring to a boil for 30 minutes. Pour into clean, sterilized pint jars. Place lids in hot water for 5-6 minutes, then place the lids on the jars. You do not need to do a hot water bath. It will seal as it cools. Be sure bottles are clean after filling so you get a good seal.

Makes 4 pints.

I have my own recipe for this and make it all the time, zucchini makes a wonderful relish :-)

I made this and it is awesome. I didn’t like the smell as I was cooking but after cooling the relish was delish! And it used up 10 cups of zukes. Make this, you will be very happy you did.
