This is a quick and easy recipe for peach preserves. Can be used as a jam or jelly, but tastes great over pork as well. Also make great gifts!
Note: You will also need four 8-ounce Mason jars with lids.
Fill a large pot with water and bring water to simmer. Submerge Mason jars in water and simmer while preparing preserves.
Chop peaches into small pieces. Add peaches to a separate pot and add lemon juice. Bring to a hard boil. Boil peaches for approximately 2 to 3 minutes. Add sugar and stir. Add liquid pectin and boil for approximately 1 minute. Remove from heat.
Remove Mason jars from water. Fill jars with peach preserves and place lid over top of jars. Screw on round rings to each jar. Submerge jars in boiling water for 15-20 minutes. Remove and let sit on counter for 24 hours and refrigerate after opening.
