Simple, perfect Raspberry Preserves.
Place raspberries, sugar, and lemon juice together in a wide, heavy-bottomed stainless steel pan and bring to a simmer over low heat. At the first sign of simmering, set the timer for 5 minutes. Once the timer goes off, remove from heat and let cool in the pan to room temperature. Spoon into jars. The preserves will keep for several months in the fridge and for several years in the freezer. Makes 2 pints. This recipe can be doubled, but it doesn’t multiply well beyond that point.

Yes, you almost don’t want too much jam around, and it’s easy to make too much.
