Description

Zucchini fritters are Turkish snacks served on a plate with sliced tomatoes and cucumbers.

Ingredients

  • 2 whole Zucchinis
  • 2 whole Eggs
  • 1 cup Feta Cheese
  • ½ bunches Parsley
  • ½ bunches Fresh Dill
  • 8 Tablespoons Flour
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • ½ cups Vegetable Oil To Fry

Preparation

Grate the zucchinis and squeeze out the juice with your hands. Discard the juice. Set the zucchini aside.

Beat the eggs in a large bowl. Add feta cheese and whisk. Mince the parsley and dill. Put them and the grated zucchini into the egg mixture. Finally, add flour, baking powder, salt and black pepper and mix them all until combined.

Heat the oil in a skillet over medium high heat. Take a little of the batter mixture with a tablespoon and throw it into the pan. Put in as many pieces as your pan can hold.

When one side is fried and golden (in about a minute), flip it over to the other side. When both sides are fried and golden, take the fritters out of the oil and put them on a paper towel to get rid of the excess oil. Repeat with the remaining zucchini mixture.

Alternatively, you can cook them in oven instead of frying if you want it without oil. You will just place the fritter mixture with a tablespoon onto a baking sheet and cook them at 180C for about 30 minutes until golden.

Serve these fritters with some greens or sliced tomatoes and cucumbers.

Oh my goodness, these are absolutely fantastic. If you are looking for a new way to make zucchini, this is a must. The only change I would make, a personal preference, is to cut the amount of salt, but otherwise this is just perfect.
