Zucchini is plentiful in my garden. We love using the zucchini to make this snack.
Preheat oven to 450ºF.
Using a mandoline, finely slice zucchinis. Place into a large bowl, drizzle olive oil over zucchini slices, and toss gently to coat. Season with salt, pepper, and onion powder and gently toss again. Transfer to a nonstick sheet pan, laying slices in a single layer.
Bake 14 minutes until done. We like ours a bit crispy!
We love to dip these in homemade Sriracha ranch dressing. Delicious!
