In my hometown, the local grocery store sells a “gourmet” pimento cheese spread. This is as close as I can come to replicating it!
Mix the salt, black pepper, and garlic powder together with the mayonnaise in a small bowl. Set aside.
Beat the cream cheese with a hand mixer in a large bowl until light and fluffy. Add the mayonnaise mixture to the cream cheese and beat until well-combined. Stir in all the cheeses, the grated onion, and pimentos. If desired, add in the chopped green onions, to your taste. Mix until all ingredients are incorporated.
Chill at least 1 hour before serving. You can make a sandwich with this, a grilled cheese, or even just serve with crackers. My friends and family prefer it with crackers, as an appetizer.

I love pimento cheese!!! I’ve only made it the home made way one time, but it wasn’t as good as the store bought. I’m going to try this, although I proably won’t be using all the different cheeses (I don’t usually have them all on hand) but hopefully with the cream cheese it will turn out yummy. Thanks for posting, and special thanks to your family for serving our country.

Hi Armywife14! First off, this recipe sounds amazing to me – I grew up having Pimento Cheese spread on cocktail rye bread for an appetizer – I have not even thought of it for years! Second, I smiled when I saw your login as I am an Army Mom! Thank you to your husband (and your entire family) for your service!!
