Peanut butter and oat balls coated in white chocolate—a healthy energy snack!
On the stove top, in a pot on medium low heat, melt the peanut butter until becomes thin and runny. Add in the oats, cocoa powder, and almonds. Combine all ingredients well. Place in the fridge to cool until set.
Once cool, roll the peanut butter mix into small balls and place on parchment paper. Once the balls are formed, melt the white chocolate on the stove top on low heat. Drizzle on top of the peanut butter balls. Return to the fridge to let the chocolate set. Once set, indulge as you like!

I made these this morning and I LOVE them! I used finely chopped walnuts instead of almonds, and that worked fine for me. I made half a batch with PB&Co’s Dark Chocolate Dreams peanut butter and drizzled those with white chocolate, and I also made half a batch using PB&Co’s White Chocolate Wonderful peanut butter and drizzled those with milk chocolate. They tasted like peanut butter cups. Thanks for a great recipe!

I used Peanut Butter and Co’s Dark Chocolate Dreams peanut butter. You can find it in most grocery stores, definitely at Whole Foods. where do you find dark chocolate peanut butter? I think I might just eat that straight out of the jar!
