Description

I came up with this recipe when I wanted a “lightened” version of Jalapeno Poppers. I make them by the dozens and no one seems to care that they are a “light” recipe.

Ingredients

  • 12 whole Jalapenos
  • 6 ounces, fluid Cream Cheese
  • ½ cups Shredded Cheddar Cheese
  • ½ teaspoons Chipotle Tabasco Sauce
  • 1 cup Fried Onions

Preparation

1. Preheat oven to 350 degrees.
2. Spray cookie sheet with non-stick spray.
3. Slice in half, lengthwise, the jalapenos and remove the seeds and stem and discard (be careful not to touch your eyes or face while doing this as it will burn). Wash hands thoroughly when done.
4. In a small bowl, combine SOFTENED cream cheese, shredded cheese and Tabasco.
5. Using a small spoon, scoop cheese mixture into each half of jalapeno, smooth so cheese mixture is level with side of jalapeno
6. Crush fried onions and place in small bowl
7. After filing all jalapenos dip each jalapeno (flat cheese side) into crushed onions and place on prepared cookie sheet
8. Bake in oven approximately 15 minutes until cheese is melted and heated through.
9. Remove from cookie sheet and serve warm.
