This appetizer satisfies every craving: tangy, savory, crunchy, creamy and sweet!
Preheat oven to 400 F and line a baking sheet with parchment paper. Spread pecans on baking sheet and drizzle the olive oil on top. Sprinkle 1/2 teaspoon of salt on top of the nuts. Let them roast for 9-10 minutes. Remove pan from oven and set it on a rack. Turn the oven down to 300 F.
Let the pecans cool then do a rough chop. Combine the pecans, rosemary, and remaining salt on a plate.
Roll the cheese in the pecan mixture, pressing firmly to coat. Put into an oven-safe dish and drizzle with the honey. Bake for 10 minutes, until soft.
Serve cheese with sliced baguette or crackers.
