Description

Full of flavor, with hints of pimento cheese and a little kick, this cheese spread is great on crackers and crudites.

Ingredients

  • 8 ounces, weight Cream Cheese, Room Temperature
  • 2 cups Grated Sharp Cheddar
  • 1 cup Grated Monterey Jack Cheese
  • ½ cups Mayonnaise
  • 3 Tablespoons Pimentos, Mashed And Rough Chopped
  • 1 Tablespoon Grated Red Onion (white Or Yellow Onion Will Work As Well)
  • ⅛ teaspoons Dill
  • ⅛ teaspoons Celery Salt
  • ⅛ teaspoons Cayenne Pepper
  • ⅛ teaspoons Salt
  • ¼ teaspoons Black Pepper

Preparation

With a mixer or by hand, beat cream cheese until smooth. Add all other ingredients and blend well.

Refrigerate until served.

Just made this so my mum and I have some to snack on while we do some Thanksgiving prep tonight. So delicious and so creamy…I highly recommend it to anyone who loves a good dip!

I whipped a batch of this up this afternoon thought it was wonderful. Being the true Southern cook that I am I did add about 3 teaspoons of sugar to the recipe. I grew up cooking with a mother who added at least a pinch of sugar to just about everything. By the way, I live right up the road from you in Forest City, NC.
