Description

Thick, chewy, and versatile granola recipe. Use whatever add-ins you want. Vegan, gluten-free, freezer-friendly.

Ingredients

  • 1-⅔ cup Rolled Oats
  • ⅓ cups Almond Flour
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ½ cups Granulated Sugar
  • 2 cups To 3 Cups Dried Fruit, Chopped Nuts And/Or Coconut Flakes (I Used Nuts, Coconut, Raisins, And Chocolate Chips)
  • 3 Tablespoons Peanut Butter (or Other Nut Butter)
  • 6 Tablespoons Coconut Oil Or Butter, Melted
  • 5 Tablespoons Maple Syrup
  • 2 Tablespoons Water

Preparation

Preheat oven to 350ºF. Line an 8 x 8 pan with parchment paper and lightly coat with coconut oil or butter.

Combine dry ingredients in a large bowl, including dried fruit and nuts.

In a smaller bowl, whisk peanut butter, melted coconut oil, maple syrup, and water until well combined.

Add wet ingredients to dry ingredients, and combine until coated well. Press mixture into prepared pan.

Bake for 32–36 minutes, or until edges are golden brown. Remove and cool completely before cutting into bars. I recommend placing these in the refrigerator or freezer before cutting to cut down on cooling time and to avoid crumbling.
