Description

Great as a side dish, perfect scooped up on a tortilla, and even better spooned over grilled fish or chicken.

Ingredients

  • ⅓ cups Sugar
  • ⅓ cups Apple Cider Vinegar
  • ⅓ cups Olive Oil
  • 1 can 15.5 Oz Black-Eyed Peas, Drained And Rinsed
  • 1 can 15.5 Oz Black Beans, Drained And Rinsed
  • 1 whole Red Bell Pepper, Diced
  • 1 whole Medium Red Onion, Chopped
  • Salt And Pepper, to taste

Preparation

In a small pot, heat the sugar, vinegar and oil. Bring to a rapid boil and remove from heat. Allow to cool to room temperature.

In a large bowl, add all remaining ingredients. Pour the cooled vinegar mixture over the top and mix well. Cover and refrigerate for at least several hours before you plan to serve it or overnight is even better.

You can add almost anything else to this dish you may prefer. I’ve seen it made with corn, celery, green bell pepper, jalapeno, etc. This just happens to be the combination I enjoy the most from a recipe given to me by a friend of ours. The moment I tried it, I fell in love.

Made this Thursday night and had it yesterday. Oh, so good and easy to make. I think what sets this off from other Texas Caviar recipes is the oil, vinegar & sugar mix. The 3 ingredients after cooking adds a nice sweet flavor to balance out the other ingredients. You can be sure I will be making this many times. (~.~)
