I developed this recipe after I found myself with 10 extra pounds of potatoes. It’s very easy and quite tasty! Also, a great way to use up those extra baked potatoes!
Preheat oven to 475 degrees.
Fry your bacon until crispy and remove to paper towel lined plate. Now take a deep breath…(forgive me dietitian aunt).
Roll the potatoes in the bacon grease and place skin side up in 9 x 13 baking dish. Place the potatoes in the oven for 8-10 mins. Remove and flip potatoes over so that skin sides are down. Fill with cheese, bacon, green onions, and peppers. Serve with ranch sour cream.
Ranch Sour Cream
1 C Sour Cream
1 T Hidden Valley Ranch Dry Salad Dressing Mix
Mix well.
**I baked my potatoes wrapped in foil, sprayed with non stick cooking spray, and sprinkled with sea salt. My potatoes took about 2 hours at 400 degrees. I then sliced them & scooped out some of the insides. Save this for another use- such as baby food.

I’m not really sure how it happened, but potatoe skins are our family’s Christmas Eve Snack tradition. I will have to make these this year! My mouth is watering.

Horribly, horribly good. Rolling the skins in the bacon drippings is genius, but a bit awkward. I used a pastry brush to coat the skins. I also used only 3 strips of bacon as mine were rather large (and all I had!) I will definitely make them again – in about a year, when the guilt wears off.
