Yummy stuffed peppers with feta and herbs.
Wash and de-seed the peppers. Make sure you cut them in half length ways. Stick them under the grill in the oven for a few minutes while you make the stuffing, about 5 minutes.
In a bowl mash up the feta, mix with the oregano, mint, salt and pepper.
Take the peppers from the grill, stuff them with about a tablespoon of the mixture, and place one thin slice of tomato on top of the stuffed pepper, drizzle with olive oil.
Put under the grill for a further 10minutes til they are golden.
*Don’t add too much salt to stuffing because the feta is quite salty anyway.
