Description

A quick, healty and summery appetizer that’s sure to delight.

Ingredients

  • 2 cups Strawberries, Diced
  • 2 Tablespoons Sugar
  • 1-½ Tablespoon Olive Oil
  • 4 teaspoons Balsamic Vinegar
  • 1 Tablespoon Dried Basil Or Fresh
  • 4 ounces, weight Goat Cheese
  • 60 whole Pita Bites Crackers By Sensible Portions

Preparation

Dice the strawberries and place them in a bowl with the sugar. Set aside for about 30 minutes, or until the berries start to get juicy. Next add the olive oil, balsamic and basil to the bowl and stir to combine. Spread a bit of goat cheese over each of the crackers and top with the strawberries just before serving. Serve immediately.

Wow this is good! Amazing flavor and texture. My only complaint is that you have to put them together at the last minute and then they are getting soggy within an hour. I think next time I’ll put the strawberries in a dish and tell people to build their own cracker. The flavor is sooo worth it!
