Quick, easy and elegant summer puff pastry treat!
Preheat oven to 400ºF. Grease a 12-cup mini muffin tin with nonstick cooking spray.
Roll the puff pastry out into a square. Cut into 3-inch squares. Cut up the cheese block into 12 small pieces.
Press a puff pastry square into each mold. Roll one strip of zucchini with one strip of summer squash and a piece of Havarti sandwiched between and place in pastry. Sprinkle each tart with oregano. Season with salt and pepper.
Place in the oven and bake until the pastry is golden brown, about 15–18 minutes. Serve immediately.
