Description

These are a great finger food for a Christmas or New Year’s party. You can also make them ahead of time and store them in the fridge until you’re ready to serve them.

Ingredients

  • 1 cup Hot Water
  • ¼ cups Butter Or Margarine
  • 1 box (6 Oz. Size) Stuffing Mix
  • 2 boxes (10 Oz. Size) Frozen Spinach, Thawed
  • 1 Tablespoon Butter Or Margarine
  • 1  Onion, Finely Diced
  • 4 cloves Garlic, Minced
  • ½ teaspoons Pepper
  • ½ cups Grated Parmesan Cheese
  • 2  Eggs

Preparation

1. Preheat oven to 400 F.
2. In a large bowl, mix the hot water and first amount of butter until butter is melted.
3. Stir in the stuffing mix.
4. Squeeze the spinach to drain all the liquid. Discard liquid. Add spinach to stuffing mixture.
5. In a frying pan, melt the second amount of butter or margarine over medium heat. Saute the onion until soft, translucent and turning golden, about 10 minutes.
6. Add the garlic to the onions and cook for 2 more minutes.
7. Add the onion and garlic mixture to the spinach and stuffing. Add the pepper and cheese; mix well.
8. In a small bowl, beat the eggs. Mix the eggs into the stuffing mixture.
9. Form the mixture into 1-inch balls. Place onto a large rimmed baking sheet lined with parchment paper, about 2 inches apart. Bake for 25-30 minutes, or until lightly golden brown and cooked through.
10. Serve warm.

Note: You can prepare and bake these moreish appetizers ahead of time and store them in the fridge until you’’re ready to serve them. Then pop them in a 400 F oven for 10-15 minutes.
