Yummy sweet potato fries “fried” in the oven. They taste just as good as the real thing, minus the guilt.
Preheat oven to 450 degrees F.
In a medium saucepan, heat a pot of water to a simmer. Place whole sweet potatoes into simmering water for 7-8 minutes to par boil them. Remove potatoes from water, pat dry with paper towel. Slice them into rounds ¼-1/3 inch thick. Set aside into a medium bowl.
Pour olive oil over the top of the potatoes, and add the spices. With a large spoon, mix together gently until all sweet potatoes are thoroughly covered.
On a non-stick rimmed cookie sheet, lay out rounds in a single layer. Place in oven for 8 minutes until potatoes are soft and start to brown. Remove pan from oven, flip over each round over and return to oven for an additional 10 minutes.
When finished, scoop potatoes onto a plate lined with paper towels to drain. Serve immediately.
