Reminiscent of a Nutrigrain bar, with an almost cookie-like exterior with hints of spice, and an interior that still presents the tanginess of the apples, these bars are also vegan and whole grain.
For the filling:
Place the ingredients in a small saucepan. Cook over low heat until the apples begin to soften and they have released their juices, about 20 minutes.
Once the apples are cooked, place the mixture in a food processor and finely chop up the apples. Set the mixture aside.
For the dough:
Preheat the oven to 350ºF.
Combine the oil, honey, molasses, vanilla, and apple in a medium bowl. Add the nutmeg, flour, and baking soda and stir to combine.
Roll the dough out to about 1/8 inch thick and cut out squares using a 3-inch square cookie cutter. You should be able to cut out about 18 squares.
Place 9 of the squares on a baking sheet covered in parchment paper and spread the apple filling on each one. About 1 tablespoon of filling will probably be what you need for each bar. Place the remaining 9 squares on top of the bottom squares, 1 for each.
Using a fork, gently press down the edges all the way around each bar. You don’t need to press all the way as you would with a hand pie, just a light press. Bake the bars for 15 minutes, or until golden around the edges. Let cool on a baking rack. Enjoy!

Hi Regan,
Barley contains gluten so these bars would not be gluten free.
