A little smokiness really does something for traditional devilled eggs and I use hot pickle slices to spice them up. These are also great with a little chipotle/adobo added to the yolks.
To smoke eggs, simply put peeled hardboiled eggs on the top grate of a smoker after any meat you’re cooking is done. Smoke for 30-45 minutes, or until the eggs turn a gorgeous amber shade.
Cut smoked eggs in half lengthwise, scoop the yolks into a small bowl and mash with a fork. Mix in the rest of the ingredients until thoroughly combined and creamy, then fill the egg whites with the mixture.
These are also great with a little chipotle/adobo added to the yolks.
