A simpler and healthier stuffed mushroom.
Preheat oven to 375ºF.

In a mixing bowl, mix together the pork, carrot, onion, and cajun seasoning.
In a non-stick skillet, sauté the pork mixture for about 5 minutes, over medium heat. If using a leaner cut, add some olive oil to the pan before cooking.
Put about 2 tablespoons minced pork mixture into each mushroom cap. Sprinkle with salt and pepper. Add some chopped up celery leaves if you’d like.
Bake in the preheated oven for 25-35 minutes.
