Today we are making a nice tapas dish: crispy fried shrimp cakes called Tortillitas de Camerones. These are made with organic chickpea flour.
Put chickpea flour in a bowl. Add paprika and parsley to the flour. Stir thoroughly before adding water. Stir again. Add scallions and stir again. Add shrimp and stir them through the mixture.
Heat a skillet to medium to high heat and add some vegetable oil. Take two spoons and scoop the batter into the vegetable oil. Press the batter down into the oil so it becomes a thick, crisp small pancake. Pan-fry pancake for about 2 minutes or until golden brown, then flip and repeat on the other side. When done, remove from pan and drain on a paper towel. Repeat with remaining tortillas.
Serve immediately.
