I live in Mexico and have slowly been learning how to cook the authentic stuff from scratch. Today I learned how to make some pretty hot salsa. This is definitely for all you spicy and hot food lovers!
Place tomatoes, chiles, and garlic cloves on a skillet. Let cook for 10 minutes, rotating every 2 or so minutes. Let the tomatoes and chiles get nice and soft … and black!
The chiles will cook faster than the tomatoes, so after about 10 minutes, remove the chiles from the skillet (and remove the stems). Continue to cook the tomatoes for another 5 minutes.
Place tomatoes, chiles, and garlic into a blender. Add water and salt. DO NOT BLEND. On the blender, hit the pulse button 5 to 8 times. Things should blend well, but should not be pureed.
Let cool and serve.

Thanks for the comments! I live in a small farming community in Vicente Guerrero. It’s about 5 hours south of the Tijuana border. I love it here! The food, the people, the culture…I’ll be sure to post some more authentic dishes!

I lived in GDL, Oax, and San Jose del Cabo off and on for many years….also had a little house on the beach in Tepic.
I miss Mexico.
