Tomatoes marinated in olive oil and garlic, then topped with feta and bread crumbs. A delicious appetizer!
Preheat oven to 375F.
Cut Roma tomatoes lengthwise. Remove seeds from tomatoes.
Mix 1 Tablespoon of olive oil with minced garlic, salt and pepper. Toss tomato halves in oil mixture until coated. Marinate for 10 minutes.
Once done marinating, place tomato halves cut side up on baking sheet.
Mix bread crumbs and Feta cheese. If you don’t like feta, feel free to use another cheese. I’m sure Parmesan would be great. The bread crumbs do take away some of the strong flavor of the Feta though.
Fill each tomato half with bread crumb and cheese filling. Drizzle with remaining oil.
Bake for 20-25 minutes until slightly softened.
