Don’t throw out those pumpkin seeds! Roast them for a nutritious treat!
Preheat oven to 350ºF.
Thoroughly wash pumpkin seeds in a colander with warm running water. Dry the seeds as much as you can by rubbing with a tea towel.
In a large Ziploc bag, drizzle olive oil, melted butter, and 1 teaspoon salt. Add pumpkin seeds to the bag, seal it, and shake until seeds are coated. Spread pumpkin seeds in a single layer on a baking sheet, sprinkle with remaining sea salt, and bake for 20 minutes, stirring every 5 minutes. Oven temperatures vary so check your seeds often. You may need to roast for a few minutes more or less.
Remove from oven and enjoy not only the deliciously salty taste but also the nutritional benefits!
