Arm yourself with a loaf of crusty bread. Maybe two.
To roast garlic, cut the top 1/2 inch or so off each head, drizzle some regular olive oil over top and add a pinch or two of salt and pepper. Wrap all four in a piece of aluminum foil and bake at 400 degrees F for about 45 minutes.
Smear about 2-3 Tablespoons of the roasted garlic on a shallow dish (you can just squeeze the heads to remove the roasted goodness inside). Drizzle about 1/2 cup of olive oil and about 2 Tablespoons of vinegar over top. The quantities of the garlic, oil, and vinegar will vary according to your taste – feel free to play with the ratios. Add more of any, if necessary. Throw a pinch or two of salt and pepper over top and have at it, dipping pieces of the bread in.

SO. DELICIOUS. I love anything you can dip crusty bread into, but this is absolutely wonderful!
Also, kudos for the super-easy roasted garlic method!
