Description

Much better for you than carrot sticks…and they taste even better! Cold water keeps them from turning brown. Eat them plain or with a sweet or savory dip.

Ingredients

  • 2 Whole Sweet Potatoes

Preparation

Peel sweet potatoes.

Cut into sticks.

Fill a bowl with water and a few pieces of ice. Put sweet potato sticks in water and swish around. Leave in water for a minute or two. Take sticks out and pat dry. This will prevent sticks from turning brown.

Serve sweet potato sticks plain or with dip. Several to try:
-ranch dip
-ranch dip with salsa added
-yogurt mixed with honey

Store sticks in refrigerator. Will last for several days. Repeat ice water bath after a day or two to refresh limp sticks.

I HATE sweet potatoes! But they taste completely different when raw! It is very much like a carrot – yet different! A little less crunch, but a little less bitter also.

um, excuse me, but am i the only person who didn’t know you could eat sweet potatoes raw?!

i knew that eating a quantity of regular potatoes raw is a no-no due to the solanine, but i did some research and since they are unrelated it looks safe. yeah! this is a revelation for my garden, thanks!
