These button mushrooms are stuffed with a quinoa mixture of garlic, fresh parsley and Parmesan cheese. Enjoy as an appetizer or a side dish for a complete protein/veggie. Don’t be afraid to add more garlic. This combination of flavors is a real treat!
Preheat oven to 350 F.
Prepare quinoa according to package directions and when it’s done place it in a medium size mixing bowl. Combine quinoa with olive oil, garlic, parsley and Parmesan cheese.
Stuff mushroom tops with the quinoa mixture and place them in an 8×8 baking dish. Add enough water into the baking dish so mushrooms are covered halfway deep.
Put dish into the oven. Bake mushrooms for 30-40 minutes or until lightly browned.
