New twist on old Queso Dip using in-season garden yums!
Preheat oven to 350F. In an oven proof skillet, cook the chorizo until almost done. Drain well. Add the poblano and onion and cook until tender. Completely remove pan from heat. Carefully add tequila. Return to heat and simmer uncovered for 15 to 20 seconds or until most of the tequila has dissipated. Stir in cheese. Bake uncovered for 15 minutes or until cheese is completely melted and slightly golden brown on top. Sprinkle with tomatoes and cilantro. Serve with tortilla chips.
Note: If you double the recipe, do not double the tequila.

Queso quesadillo cheese is a buttery white cheese commonly used in Quesadillos. You may substitute Monterrey jack if you cannot find it in your grocery.
