There are times when recipes happen by accident. These crispy dumplings came together as a way to use up a pie made without sugar. Sprinkled with cinnamon sugar, baked in the oven, mmm good.
Mash up the pumpkin pie. Lay the wonton wrappers out on a work surface. Fill each wrapper with a tablespoon or so of pumpkin pie filling. Fold the wonton over the filling and seal the seams well. Arrange the wontons on a cookie sheet. Spray with oil. Sprinkle generously with cinnamon sugar.
Bake for 10 minutes in 400F oven.
